Gluten Free Diets

Subjects on a Gluten Free Diet, who did not have Celiac Sprue, had significantly elevated levels of mercury, lead, cadmium, and arsenic in their blood and urine. These metals did not reach levels felt to be unsafe.  It is unknown if long term accumulation will create problems in the future.  So, a Gluten Free Diet may not be a healthy choice in non-celiac individuals.  Journal of Gastroenterology and Hepatology, Feb., 2018.  MS
